I have been using you diced ham for a couple years for my morning omelet. Overall I have been very happy with the quality of your product until recently. In the last couple if packages, I have noticed more (uneatable) pieces of the outer casing included in the package. Has there been a change in the processing of this product which results in more of this by-product?

We appreciate your honest feedback. We did make a change to the way we make our diced ham back in 2021. The “outer casing” is a rind that naturally forms as the ham is smoked and the outside proteins in the meat toughen. Our previous diced ham recipe used an unsmoked ham, and therefore did not have the rind. We made the change to provide some additional smoke flavor and a more authentic ham experience, but we’re sorry if it is not to your liking. We realize not everyone prefers rind pieces over inside cuts, but we do want to clarify that the rind is completely edible and not an unnatural casing added to the meat.
