While the ham is good, I will not buy this anymore because of the nitrates. I was very disappointed to notice this was in the ingredients – unnecessary and it’s very harmful to our health.

Perhaps our No Antibiotics Ever line of products would be a better fit for you, if available at a store in your area. This line of products is considered “uncured” because no nitrates or nitrites are added, except for those naturally occurring in celery powder and sea salt. Something to note regarding nitrates though: you consume far more nitrate in the vegetables you eat than in any one meat product. Vegetables such as celery, radishes, spinach, arugula and more are naturally high in nitrate.
Nitrite, whether from sodium nitrite, potassium nitrite or natural sources, is actually very necessary in the making of ham for food safety and to get the characteristic pink color and flavor of the meat. If it’s pink like your typical ham and tastes like your typical ham, it’s been cured with nitrate/nitrite in some capacity.
